Homemade Tomato Soup

Equipment

  • 1 stock pot
  • 1 sheet pan

Ingredients

  • 15 tomatoes cut in half
  • 1 large onion
  • 3 cloves garlic
  • 2 red bell pepper optional
  • 2 TBSP fresh chives
  • sprig basil
  • 2 tsp each salt, pepper, paprika, oregano
  • ½ c chicken stock
  • Boursin Cheese optional

Instructions

  • Cut tomatoes, bell peppers, garlic, and onions. Chop chives
  • Lay them cut side down on a sheet pan
  • Bake at 375℉ for 45minutes
  • Once baked place in a stock pot and add chicken stock
  • Blend to desired texture with an immersion blender or regular blender.
  • Optional: strain soup through a mesh strainer for a smoother consistency.
  • Enjoy with grilled cheese or plain.
