Ingredients

tomatoes
cut in half

onion

garlic

red bell pepper

salt, pepper, paprika, oregano

chicken stock
Boursin Cheese

Instructions
Cut tomatoes, bell peppers, garlic, and onions. Chop chives
Lay them cut side down on a sheet pan
Bake at 375℉ for 45minutes
Once baked place in a stock pot and add chicken stock
Blend to desired texture with an immersion blender or regular blender.
Optional: strain soup through a mesh strainer for a smoother consistency.
Enjoy with grilled cheese or plain.
