Nutritional Properties of Homemade Tomato Soup

Tomato soup is a timeless classic that has been enjoyed for generations, and there’s nothing quite like a bowl of homemade tomato soup to bring warmth and comfort to your table and belly. It’s such a staple in the home and can be used for lunch or dinner.

What to eat with Tomato Soup?

Tomato Soup is filling enough to be eaten alone, but I recommend enjoying it with some grilled cheese on homemade sourdough bread. I like to add ingredients into my bread during the stretch and folds to make the bread tastier and give it an extra pop of flavor. I previously enjoyed adding pepperoncini’s, stuffed olives, and cheddar cheese to my sourdough. That combined with the tomato soup had me and my family stay full for hours and coming back for seconds.

How to store leftover?

One of my biggest hacks as a full-time working mom is to make food in bulk and freeze any leftover for future meals. Soup is one of the easiest foods to freeze and is maintains its flavor well after being thawed. It is easy to reheat too! I have bought “Souper Cubes”, they are pre-portioned out silicone molds that you can dump soups, chili’s, and any liquids into.

Dumping in a freezer safe Ziploc bag is a great second option, I would recommend freezing flat to help save space in your freezer.

Adding nutrient dense foods

There are several different ways to add nutrients to your tomato soup. Besides the benefits of adding herbs and fresh produce, adding chicken stock is a great way to boost nutrients and add extra flavor. With added electrolyte benefits it aids in digestibility and helps those who are immunocompromised or recovering from illness.

Homemade Tomato Soup

Prep Time 20 minutes
Cook Time 45 minutes
Serving Size 4 people

Equipment

  • 1 stock pot
  • 1 sheet pan

Ingredients

  • 15 tomatoes cut in half
  • 1 large onion
  • 3 cloves garlic
  • 2 red bell pepper optional
  • 2 TBSP fresh chives
  • sprig basil
  • 2 tsp each salt, pepper, paprika, oregano
  • ½ c chicken stock
  • Boursin Cheese optional

Instructions

  • Cut tomatoes, bell peppers, garlic, and onions. Chop chives
  • Lay them cut side down on a sheet pan
  • Bake at 375℉ for 45minutes
  • Once baked place in a stock pot and add chicken stock
  • Blend to desired texture with an immersion blender or regular blender.
  • Optional: strain soup through a mesh strainer for a smoother consistency.
  • Enjoy with grilled cheese or plain.
