Pollo en Crema (Chicken and cream soup)
Ingredients
1 lb chicken breast
3 diced tomatoes
2 diced potatoes
1 sliced red bell pepper
2 chopped carrots
2 bay leaves
4 garlic cloves
1 diced onion
1 sprig fresh rosemary
1 sprig fresh thyme
1 tsp dried oregano
1/2 cup Homemade chicken stock
1 cup sour cream
Instructions
- Cook chicken in a medium sized pan.
- Once cooked, add in chopped onion, garlic, rosemary, thyme, oregano, and bay leaves.
- Add potatoes, carrots, and chicken stock. Stir until they have started to soften.
- Once they have started to soften add your bell peppers and tomatoes.
- Turn heat to low and simmer until potatoes and carrots are cooked through.
- Turn off heat and add sour cream. It is important that the soup does not boil while sour cream is added or else it will curdle.
- Serve on top of rice in a bowl.
