Pollo en Crema (Chicken and cream soup)

Ingredients

1 lb chicken breast

3 diced tomatoes

2 diced potatoes

1 sliced red bell pepper

2 chopped carrots

2 bay leaves

4 garlic cloves

1 diced onion

1 sprig fresh rosemary

1 sprig fresh thyme

1 tsp dried oregano

1/2 cup Homemade chicken stock

1 cup sour cream

Instructions

  1. Cook chicken in a medium sized pan.
  2. Once cooked, add in chopped onion, garlic, rosemary, thyme, oregano, and bay leaves.
  3. Add potatoes, carrots, and chicken stock. Stir until they have started to soften.
  4. Once they have started to soften add your bell peppers and tomatoes.
  5. Turn heat to low and simmer until potatoes and carrots are cooked through.
  6. Turn off heat and add sour cream. It is important that the soup does not boil while sour cream is added or else it will curdle.
  7. Serve on top of rice in a bowl.
